while making a wine kit I addeed too much water to the grape juice, I have not added anything else yet, is there something I can do to stop it from being too watery or weak?

Depends on how much water you used. When I get a winekit which is rare nowdays, I usually add a bottle of red grape concentrate to give it more body. Try that, and let me know just how much you over did it.
