I followed directions from Jack Keller's site.Primary fermentetion went well,racked into secondary,took a specific gravity reading at 1.000(1 week). Thought I'd try a samle to see how it is coming along and taste like vinegar. Is this ruined or is there something else I should do?

Two things, first of all it is not quite done fermenting. Second of all new wine tastes like crap, it's just a fact. Also yeast produces some vinegar so having some is not a big deal. As long as you are not making vinegar somewhere in the area the chances are that you did not produce it. Wine needs to age at least 3=6 months before it starts to taste right. Age it in bulk and see what happens.

Yes, I actually rinse everything with water real good, then use Potassium Metabisulphite before and after each time I use hydrometer, spoon, etc.
