I have a couple of batches brewing. The first two , grape concentrates, have been bubbling in the secondary for a month. i get a bubble every couple of minutes and it has cleared much. my last batch, passion fruit concentrate, has been in the secondary bubbling about 3 weeks and is very clear now. (I used p.enzyme on the passion fruit batch. maybe thats why its very clear now.) there is alot of sediment in the passion and quite a bit in the grape batch. So my question is "To rack or not to rack?" Will it hurt the flavor setting on the lees? will it hurt it to rack it and re-airlock it?

what do u all think?

If they are in the secondary fermenters and still actively fermenting I would leave them there until they are done. If there is a lot of fruit or something on the bottom of the carboy you might want to rack but since you are using concentrates you probably do not have that issue.
