Been making wine from wild berries Grape,blueberry,blackberry, plum and elderberry)for 3 years now without adding SO2 to the finished wine. No problems yet.

Do I need to? How much metabisulfate do I need to use for 5 gallons of wine?

You don't have to but it does protect the wine from both oxydation and microbes. You can add 1/16th tsp per gallon before bottling up to 1/8 tsp. Don't over do it.

Thanks a bunch.

I think I'll try 1/16th of a teaspoon per gallon and see what happens.

Seems my wine doesn't last long.

Relatives and friends drink it before it ages long. Bottled 96 bottle last year. All gone except what I saved to see what happens with aging.

It will allow it to age a bit longer, might want to cellar some and see how it changes with time, usually it improves a lot in a year, well depending what it is.
