Is there a substitute for pectic enzyme? I ran out at a bad time .

The layer of green immediately under the skin of the papaya contains natural pectic enzyme.

Depending on what you are making you may be able to get away without it. Some yeast strains produce enzymes. Do some research on yeasts.
