I am making wine for the first time. I ordered a 6 gallon bucket of Sangenovine grape juice. So far I Let it sit for a month and shook it periodically. I put it into a 5 gallon glass jay. Added 5 campden tablets, and racked it twice in the last 2 months. I feel like I am doing something wrong. Am I suppose to measure or test anything? Why did the guy that is helping me make it say not to put yeast in it? Where is the alcohol gonna come from? Any thoughts would help, thanks!

I mean when during the process do I add yeast to the wine or dont I add it?

You add 5 campden tabs wait 24 hr then add 1 pkg of yeast.So I guess you should have done that months ago. I hope your juice has not spoiled.

sweet, thats great to know. I know I should know this but like I said I am new at this. Didnt know too much going into it. I was under the impression that the bucket of wine I purchased had all of that in it and the yeast came from the grape skins. Thats why I shook the bucket for a month then let it sit for a week to collect all of that sludge at the bottom before putting it into a glass 5 gallon jug. Am I wrong about this?

No if you bought juice I have never hear of it coming with yeast already in it. Even juice will make a little sediment in bottom of bucket, but when you say sludge I think you may have fermented. Was it just a little coating on bottom or was it like a 1/4 inch or more thick of stuff. Also by now you should taste alcohol it should taste like dry wine. It is possible to ferment from the skins but I cont believe that they were processed to ship and the yeast was still there.

I think its tasting pretty good and has a nice alcohol taste to it. Is it too late to put yeast in? Is there anything I can do to see if its ok?

When I transferred it from bucket to glass carboy there was about an inch or more of sludge.

Drop a hydrometer in it and see if its done fermenting, If it taste good must be good.
