get it tasting good. wait 6 weeks and see if it
has clouded or threw off any more sedimate.
Of course I have a pear thats at a year and I need
to rack and get it tasting good , just a matter of
like to say my time is a little off it is 10 or 11 month not quit a year however I know the schedual date for racking came around when I was busy. I unwrapped it today and glad I left it. I checked it the month I planned to rack it but today there was a good dusting on the bottom. Then from what I read I was really supprised when I tasted it. I had to think all several hours on weather or not to backsweeten. Ended up boiling a 1/4 cup honey because I had nothing to top up with. So there you go past 9 months and I am still working on this one.
