Just bought couple days ago a 5gal pail of Pinot Grigio juice, brought from California and it has not started fermenting yet. Measured sugar percent at 21 and potential alcohol at 11%. I would highly appreciate a suggestion for steps to be made here.

It can take a few days for fermentation to start. Sugar level is good. I think perhaps you need to be patient. If it is a kit, then follow the instructions.
have you stirred it a few times?

thanks Bob, I just did it today, but didn't rich all the way to the bottom of the bucket...
