I started making my own wine last year. I received some fresh elderberries from my father who has been making his own wine for 20+ years. Since that if been hooked- elderberry, peach, cranberry/apple and this week i'll start my first batch of Merlot with a juice concentrate.

My Question: I still have my cranberry/apple in the carboy. It finished fermenting a while ago and I'm just waiting for it to clear a little more. I ordered some bentonite (which arrives today) to aid in the process. If I'm finishing with honey, should i add the honey, potassium sorbate, then bentonite- in that order? How long should i wait in between?

Also, I've been using the mushroom style corks. Would it be wise to invest in a regular corker? Will regular corks preserve the wine better/longer?

Regular corks do let a wine age a bit longer because of a tighter seal, will it make it better... that remains to be seen! Usually a wine will mellow a bit with time but every wine has a lifespan, and fruit wines it will be hard to get more than a few years out of total without some sort of precipitation in the bottles. This is not always the case but it is a pretty good rule of thumb. I make a ton of fruit wine when grapes are not in season.
Depending on how much lees are in the carboy you may want to rack first before the bentonite, but yes definately honey and sorbate first, also check your sulfite level as the sorbate tends to cloud the wine if there is not enough of it. Boil water to mix with the bentonite, and if you have a decent blender mix it in there for about 5 minutes and then let it sit for an hour, add the slurry to the wine after that. If you don't have a blender to use mix it in a bottle and shake the crap out of it and let it sit overnight. This helps the clay develop it's charge which attracts the particles in the wine and drops em out.

Quick tip with the concentrate- when you rack it kind of spash it into the carboy in your first racking and make sure to do it around 1.015 specific grav. This will drive off the weird smells you often get with concentrate.
